My Peanut Butter Cookie Recipe
by Kristin Shaeffer
1 c. Butter or margarine, softened
1 c. peanut butter
1 c. firmly packed brown sugar
1 c. granulated sugar
2 eggs
1 teaspoon vanilla
3 1/2 c. all-purpose flour
1 teaspoon baking soda
In large bowl of an electric mixer, beat butter until creamy. Gradually beat in peanut butter, then brown sugar, then granulated sugar. Beat in eggs, then vanilla.
In another bowl, stir together flour and baking soda; gradually add to butter mixture, blending thoroughly. Roll dough into 1-inch balls and place 2 inches apart on greased baking sheets. Press balls down with a fork, making a crisscross pattern on top of each with fork tines.
Bake in a 375 degrees oven for 8 to 10 minutes just before they are golden brown. Let cool on baking sheets. Store airtight. Makes about 4 dozen.
